Dragon Fruit Unicorn Smoothie Bowl – Summer’s Here, LupusChicks

I am a winter baby at heart, but I don’t think I have ever been so excited to see summer! And with the hotter temps comes an abundance of fruit. My favorites are berries, pineapple, and the beautiful dragon fruit (or Pitaya). Dragon fruit is not only stunning to look at, but it is filled with antioxidants, Vitamin C, omega fatty acids and it is low in calories. They can have white or pink interiors. You can see from the pictures I staged and took for this unicorn smoothie bowl, I even used the dragon fruit shell as the serving dish…

When dragon fruit is not in season, or you are specifically trying to find one with pink flesh, you can opt for a Pitaya Plus Smoothie Pack in your grocer’s freezer. It is one hundred percent frozen pink Pitaya and tastes yummy – A great option when the fruit is out of season in your area.

To get the alluring “unicorn” effect, you can mix E3Live’s Blue Majik powder or spirulina to vanilla yogurt (I used SILK soy yogurt) until you get a rich blue colors. Top with hemp seeds for final effect.

Equally healthy as it is stunning, this dragon fruit unicorn smoothie bowl is packed with vitamins, fiber, omegas, protein and more!

Directions

1Place the banana, Pitaya Smoothie Pack, pineapple, ground flax seeds, coconut oil, and milk-substitute into a high-power blender. Blend on medium to high for 15 - 30 seconds until smooth and creamy. Be careful not to blend too long as it can thin the consistency of the smoothie. Pour into a bowl and stir in the collagen powder until it dissolves. Set aside in your refrigerator.

To create the unicorn effect

1Next, in a separate bowl, mix the vanilla yogurt and spirulina or Blue Majik powder until you have a rich blue color. Add raw honey and stir until completely smooth.

2Take your finished Pitaya bowl and pour it into an empty dragon fruit shell or serving dish of your choice. Next, using a small spoon, swirl in small amounts of the blue yogurt.

3Try topping your unicorn pitaya smoothie bowl with hemp seeds, berries, coconut flakes, edible flowers, etc.

Tips for Your Unicorn Pitaya Smoothie Bowl

1If you prefer a thicker consistency, use less milk-substitute in the recipe.

2You can choose not to add raw honey into your spirulina and yogurt if you are on a low sugar diet. Some people feel spirulina can give off a fishy taste (depending on the brand), and using raw honey can help conceal this flavor.

Ingredients

1 frozen banana

1 frozen Pitaya Plus Smoothie Pack (or a ½ cup fresh pink Pitaya)

½ cup fresh pineapple chunks

1 tsp. ground flax seeds

¼ cup milk-substitute (almond, rice, coconut, soy, hemp)

½ tsp. coconut oil

1 scoop Further Food Collagen

1 small container (5.3 oz.) of vanilla yogurt substitute (soy, coconut, almond)

½ tsp. Spirulina powder or E3Live’s Blue Majik powder

½ tsp. raw honey

Optional topping choices

Fresh berries

Coconut flakes

Sunflower or hemp seeds

Edible flowers
